Chocolate Chip Muffins
Yield: 9

Ingredients
2 cups almond flour
⅓ cup coconut flour
1 teaspoon baking powder
¼ teaspoon salt
2 teaspoons cardamom
1 teaspoon cinnamon 
4 eggs
2 teaspoons vanilla
3 tablespoons granulated monk fruit
½ cup unsweetened apple sauce
¼ cup melted ghee or coconut oil
¼ cup unsweetened chocolate chips


Directions
  1. Preheat oven to 350F and line or grease a muffin tin.
  2. In a large bowl combine the almond flour through cinnamon and whisk well with a fork.
  3. In a medium bowl, whisk the eggs. Add the vanilla, monk fruit, apple sauce, and ghee or coconut oil and mix well.
  4. Pour the wet ingredients into the bowl of dry ingredients and fold to combine. Add the chocolate chips and mix.
  5. Bake for 25 minutes.
