Easy Peasy Apple Crumble
Serves 4

Ingredients
2 tablespoons fresh lemon juice (approximately juice of one lemon)
3 honey crisp apples, peeled, cored, and cut into 1” dice
½ teaspoon cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
1 teaspoon vanilla
4 tablespoons melted coconut oil or ghee
2 tablespoons granulated monk fruit (can omit)
½ cup chopped walnuts
¼ cup slivered almonds
¼ cup unsweetened shredded coconut 

Directions
  1. Preheat oven to 375F.
  2. In a large bowl, squeeze lemon juice. Add diced apples, cinnamon, nutmeg, and ginger and combine well. 
  3. Pour apple mixture into a 9” baking pan.
  4. In the same large bowl, without wiping it clean, add the vanilla, coconut oil or ghee, and monk fruit and mix well. Add the nuts and coconut and toss to combine.
  5. Pour the nut mixture on top of the apples and spread out evenly. 
  6. Bake for 40 minutes.
