Collagen Biscuits
Yield: 4

Ingredients
⅔ cup cassava flour
⅓ cup collagen powder 
1 ½ teaspoons baking powder
¼ teaspoon salt
¼ cup unsweetened coconut yogurt
1 egg
1 egg white
2 tablespoons ghee 

Directions
  1. Preheat oven to 400F and line a baking sheet with parchment paper. 
  2. Add the cassava flour, collagen, baking powder, and salt to a medium bowl and whisk with a fork.
  3. Add the coconut yogurt, egg and egg white, and ghee directly into the bowl with the flours and mix well.
  4. Using a 2” spring release cookie scoop (or ⅓ measuring cup) drop the dough onto the cookie sheet.
  5. Bake for 15 minutes.
