Pumpkin Cardamom Pasta Sauce

Ingredients 
1 tablespoon grassfed ghee
1 tablespoon minced garlic (approximately 2 cloves)
1 ½ cups chopped yellow onion (approximately 1 small onion)
½ cup chopped celery (approximately 3 stalks)
1 ½ teaspoon cardamom
½ teaspoon cinnamon
½ teaspoon sage
¼ teaspoon nutmeg 
1 tablespoon nutritional yeast
1 teaspoon salt
1 15 ounce can tomato sauce
1 15 ounce can pumpkin purée 
1 ½ teaspoon balsamic vinegar
1 packet Serenity Kids grassfed beef baby food 

Directions
  1. Melt ghee over medium heat in a large sauce pan.
  2. Add the chopped onions and celery and sauté until soft and beginning to caramelize, stirring frequently (approximately 5-7 minutes).
  3. Add garlic and sauté for 1 minute.
  4. Add the cardamom, cinnamon, nutmeg, sage, and salt and sauté for 1 minute.
  5. Add the tomato sauce and pumpkin purée and stir to combine. Bring mixture to a boil, then reduce heat to low and simmer for 7-10 minutes, stirring occasionally so sauce does not stick to pan.
  6. Add the sauce mixture, nutritional yeast, balsamic vinegar, and baby food (if using) to a high speed blender. Process until smooth.
