Sweet Potato Omega Patties
Yield: 10 patties

Ingredients
3 cups peeled and chopped sweet potato (approximately 2)
1 cup cassava flour
3 tablespoons chopped scallion (white and light green part only)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Himalayan salt
1 packet My Serenity Kids wild salmon baby food
3 tablespoons avocado oil 

Directions 
  1. Place chopped potatoes in a medium pot and cover with cold water. Bring to a boil over high heat, then reduce to low and simmer until fork tender, approximately 10-15 minutes.
  2. Drain potatoes and return to pot. Let cool slightly then mash potatoes with a fork. Add all remaining ingredients, except avocado oil, and mix well. 
  3. Heat a large sauté pan over medium-high heat then add avocado oil. 
  4. Using a 2” spring-release cookie scoop, shape the mixture into balls and drop directly into the pan. 
  5. Flatten the balls into a patty shape with a spatula. If the mixture sticks, give the spatula a gentle shake to release.
  6. Cook patties until browned, 3-4 minutes per side.
